Pintrest has become a huge part of every modern girl’s life, whether you are looking for inspiration for your wedding, a new outfit, or what you want to have for dinner. It’s become a go to platform for when you have vision, but need a little help making it reality. One of my favourite things to do on Pintrest is look up new, healthy recipes to make for my friends and family. I figured instead of just making them for the ones I love, why not share them here, so they can make them too!
- Creamy Coconut Lentil Curry
First we have a dish I like to make at the beginning of the week because it makes lunches easy peasy! Since I cannot eat seed I use ground cumin and coriander and it tastes great. I like to make mine spicy so I use a heaping teaspoon of cayenne and add an tsp of Medium Yellow Curry Powder for flavour. When I want extra veg I also like to add kale. It’s a simple recipe and when you put it on top of cauliflower rice it’s a filling, healthy, crowd pleaser!
- Roast Beetroot Falafels
Protein full and delicious. These little falafels are great for a quick snack or a delicious dinner. They can be a bit hard to mix, so I am still working on the best way to do that, but don’t let that stop you from making them because you will be missing out! I highly suggest you make the easy tahini sauce with it to top off the yumminess.

Looking for something sweet that you don’t have to feel horrible about? The Unconventional Baker has got you covered! This is just one of the many amazing recipes on the site and I promise it will not be disappointed. Coffee and chocolate… I think that is what dreams are make of, aren’t they?

Sorry for anyone who is allergic to nuts, but I love my nut-based desserts. This vegan cheesecake recipe will hit the spot and not leave you wanting the real thing. I’ve made this in little cupcakes, which are great for parties, and as a whole cake. Just be warned that if you make it as a cake your chilling time grows substantially. That once burned me…or should I say froze me…oh well, you live and you learn.
- General Tsos Cauliflower
Lastly, we have a dish that makes for a great appetizer and your guest will not believe that they are eating cauliflower. I am a huge sweet chili fan, so I make my own sauce, but the one in this recipe is great too! If you stay tuned I promise I’ll share my sweet chili recipe with you soon!
